Sweet and Sour Chicken Stir Fry

Recipe Serving Size: 4 ounces
Servings Per Recipe: 8 servings

2  pounds  boneless, skinless chicken breasts, diced 
2  tablespoons  vegetable oil 
2    bell peppers, diced (colors of choice) 
1  small  onion, diced 
1  can  pineapple tidbits or chunks, drained (or 1 cup fresh diced pineapple) 
    3/4 - 1 cup Homemade Gourmet® Pineapple Peppercorn Glaze 
    cooked rice of choice 

1. Heat oil in a wok or large skillet over medium high heat. Add chicken and stir fry until it is no longer pink. Drain any liquid that remains in the pan.

2. Add the peppers and onion and continue to stir fry until vegetables are tender.

3. Add the pineapple and glaze to taste. Continue to cook over medium heat until heated through. Serve immediately over rice.
