Lettuce Wraps

Recipe Serving Size: 2 wraps
Servings Per Recipe: 6 servings

3  pounds  boneless, skinless chicken breasts, diced 
2  tablespoons  vegetable oil 
    Homemade Gourmet® Sesame Ginger Dressing 
1  cup  shredded carrot 
1  cup  diced green onion 
1    small can waterchestnuts, drained and diced 
16    iceberg lettuce leaves 

1. Place oil in a wok or large skillet over medium high heat. Add chicken breasts and cook until no longer pink. Drain any liquid from the pan.

2. Add a few tablespoons of the dressing to the cooked chicken, enough to coat and flavored to taste. (extra dressing can be added as the wraps are assembled) Stir fry a few more minutes to heat through. At this point, you may shredd the cooked chicken if desired.

3. Place lettuce leaves, carrots, green onions and water chestnuts on a serving platter along with the chicken (keep the chicken in a bowl on the platter to keep juices from running). Provide extra dressing* for individuals to drizzle over assembled wraps as desired.

4. Each person can assemble wraps as desired. Take one lettuce leaf in the palm of your hand, add a portion of the chicken and top with desired vegetables. Drizzle with extra dressing* as desired, and eat as you would a wrap or a taco.

NOTE: Chicken can be made in advance and refrigerated or frozen. When ready to serve, you may serve them chilled or reheated.
