Skillet Fried Rice

Servings Per Recipe: 6 servings

1  tablespoon  canola oil 
1    Homemade Gourmet® Skillet Fried Rice Mix with seasoning packet 
2  cups  hot water 
2    eggs 
2  cups  cooked, shredded chicken or pork, ground beef or small pre-cooked shrimp* 

1. In large skillet, heat oil over medium heat, add rice and sauté until rice begins to brown.

2. Add seasoning packet and water. Bring to boil, stirring constantly. Reduce heat, cover and simmer 20 minutes.

3. Remove lid and return heat to medium. Move rice mixture to one side of skillet and scramble eggs on clear side of skillet.

4. Stir scrambled eggs into rice mixture. Add chicken, pork, beef or shrimp and cook until thoroughly heated.

*Serving Suggestion: Omit the meat to make a great side dish.
