Skillet Tex-Mex Dinner

Servings Per Recipe: 6 servings

1  pound  lean ground beef*, browned and set aside 
1    Homemade Gourmet® Skillet Tex-Mex Dinner Mix with seasoning packet 
2  cups  hot water 
3  tablespoons  oil 
1  14.5-ounce  can diced tomatoes 
1  4-ounce  can diced green chilies, undrained 
    shredded cheddar cheese, optional 

1. Dissolve seasoning packet in hot water, set aside. In a nonstick skillet or pan, heat oil over medium-high heat. Sauté rice until just
turning golden. Add seasoned water to rice, stir and reduce heat to low. Cover and simmer 15 minutes or until rice is tender and water has evaporated.

2. Once rice is done, add in meat, tomatoes and green chilies; stir to combine and cook until heated through (about 5 minutes). Top with cheese if desired and serve warm.

*May substitute ground turkey, chicken or pork and increase amount of meat used, if desired.
